Why is there a change in color when you remove water from a hydrate?

Why does CuSO4掳5 H2O change of color when you get is anhydrous form? Please do not give me answers like %26quot;because it lost water%26quot;, I need something based on chemical principles.Why is there a change in color when you remove water from a hydrate?The color of a complex ion depends upon the transition metal and it's ligands so a TM metal would have different colors for different ligands and getting rid of those ligands (in this case water) will also result in a change of color
